  • 1 large Watermelon ripe and seedless
  • ¾ cup Feta Cheese crumbled, can substitute with goat cheese or alternative
  • ½ medium Red Onion thinly sliced
  • ½ medium English Cucumber sliced
  • ¼ cup Fresh Mint finely chopped, add just before serving
For the Dressing
  • ¼ cup Balsamic Vinegar or other vinegar types
  • 2 tablespoons Olive Oil preferably extra virgin
  • to taste Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together ¼ cup of olive oil, 2 tablespoons of balsamic vinegar, a pinch of salt, and freshly cracked black pepper. Add 2 tablespoons of finely chopped fresh mint and whisk until well combined and emulsified.
  2. Cut the watermelon into bite-sized cubes, slice ½ of a red onion and half an English cucumber. Add these ingredients to the bowl with the dressing and gently toss.
  3. Crumble about ¾ cup of feta cheese into the salad, sprinkling it on top. Mix gently to combine.
  4. Transfer the salad to a serving dish and garnish with extra mint leaves before serving.
