- Preheat your oven to 320°F (160°C). Gather mixing bowls and baking equipment.
- Separate the egg whites into a large mixing bowl, ensuring no yolks sneak in.
- Add a pinch of salt and cream of tartar to the egg whites. Whip on high until stiff peaks form (3–5 minutes).
- In another bowl, mix egg white powder, whey protein isolate, and beef gelatin powder. Sift half into the whipped egg whites and gently fold.
- Whip the egg yolks until creamy (2–3 minutes) and fold into the egg white mixture until uniform.
- Pour half the batter into a silicone loaf mold, tap to release air pockets, then add remaining batter and smooth out.
- Bake for 30 minutes, then turn off the oven and leave bread inside for an additional 25–30 minutes.
- Remove from oven and allow to cool completely before slicing (at least 30 minutes).
