  1. Start by washing and chopping your ingredients to streamline the cooking process.
  2. Heat a large skillet over medium heat for about 2 minutes. Add the sliced smoked sausage and cook for about 4-5 minutes until golden brown.
  3. Incorporate the halved baby potatoes along with smoked paprika, Italian seasoning, salt, and black pepper. Cook for 5-7 minutes until the potatoes turn golden.
  4. Return the cooked sausage to the skillet. If adding spinach, fold it in and cook for about 2 minutes until wilted.
