  1. Cut fresh chicken breasts into bite-sized pieces and lightly season with salt and powdered sugar. Chill in the refrigerator for 30 minutes.
  2. In a mixing bowl, combine flour, powdered sugar, garlic powder, paprika, chili powder, salt, and pepper. In another bowl, whisk together eggs and milk until frothy.
  3. Dip each chicken piece into the flour mixture, then into the milk and egg mixture, and back into the flour mixture for double coating.
  4. Place coated chicken pieces on a greased baking sheet, ensuring they are evenly spaced. Spray tops lightly with cooking spray.
  5. Preheat oven to 400°F (200°C) and bake chicken for 15-20 minutes, flipping halfway and respraying for even browning.
