Method
 

Steps for Baking
  1. Preheat your oven to 350°F (175°C). Gather your ingredients.
  2. Grease a standard loaf pan with coconut oil or butter, or line it with parchment paper.
  3. Mash very ripe bananas in a large mixing bowl until smooth.
  4. Add eggs, melted coconut oil, natural sweetener, and vanilla extract to the mashed bananas and mix thoroughly.
  5. In a separate bowl, whisk together oat flour, protein powder, baking powder, baking soda, and optional cinnamon.
  6. Slowly add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 35-40 minutes.
  8. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
