  2. Pat the white fish fillets dry with a paper towel and season with salt and pepper.
  3. Brush a baking dish with olive oil and layer half of the cherry tomatoes.
  4. Lay the seasoned fish fillets over the tomato layer and squeeze half a lemon over the fish.
  5. In a mixing bowl, combine remaining tomatoes, olives, shallot, garlic, thyme, oregano, salt, pepper, and olive oil, mixing well.
  6. Pour the mixture over the fish, ensuring even distribution.
  7. Bake for 15-20 minutes until fish flakes easily with a fork.
  8. Squeeze the remaining lemon over the baked dish before serving.
