Preparation Steps
- Begin by blooming the gelatin. In a small bowl, mix gelatin powder with cold water and let sit for 5 minutes.
- Gently heat the bloomed gelatin in the microwave for 15-20 seconds or on the stove until dissolved.
- In a blender, combine cottage cheese, sugar-free maple syrup, grated lemon zest, and lemon juice. Add melted gelatin and blend until smooth.
- Taste the mixture and adjust sweetness or acidity as needed, then blend again.
- Pour the mousse mixture into serving cups and cover. Chill in the refrigerator for at least 2-3 hours.
- Garnish each serving with fresh berries and mint leaves before serving.
