For the Mousse
  • 2 cups Cottage Cheese opt for plain for the best results
  • ¼ cup Sugar-Free Maple Syrup or honey/agave as substitutes
  • 1 tablespoon Gelatin Powder bloom it beforehand for optimal texture
  • 1 tablespoon Grated Lemon Zest always choose fresh
  • ¼ cup Lemon Juice fresh juice recommended
For Garnishing
  • 1 cup Fresh Berries strawberries, blueberries, or raspberries
  • a few Mint Leaves for garnishing

Method
 

Preparation Steps
  1. Begin by blooming the gelatin. In a small bowl, mix gelatin powder with cold water and let sit for 5 minutes.
  2. Gently heat the bloomed gelatin in the microwave for 15-20 seconds or on the stove until dissolved.
  3. In a blender, combine cottage cheese, sugar-free maple syrup, grated lemon zest, and lemon juice. Add melted gelatin and blend until smooth.
  4. Taste the mixture and adjust sweetness or acidity as needed, then blend again.
  5. Pour the mousse mixture into serving cups and cover. Chill in the refrigerator for at least 2-3 hours.
  6. Garnish each serving with fresh berries and mint leaves before serving.
