  • 1 tablespoon Fresh Mint Tear leaves to avoid bitterness
  • 1 tablespoon Lime Juice Fresh is best
  • 1 teaspoon Sea Salt Adjust to taste

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together 3 tablespoons of olive oil, the juice of one lime, and a pinch of salt and pepper. Add mint leaves and whisk until well blended.
  2. Cut a seedless watermelon into quarters and then slice into bite-sized cubes, removing any seeds.
  3. Cut a seedless cucumber in half lengthwise, then slice into quarters and pat dry.
  4. Add cubed watermelon and sliced cucumber to the dressing bowl, crumble feta cheese over the top.
  5. Gently toss the ingredients together until everything is evenly coated with the dressing.
  6. Transfer the salad to a serving dish and garnish with mint leaves and crumbled feta. Serve immediately.
