Step-by-Step Instructions
  1. In a large mixing bowl, thoroughly combine the minced beef or lamb, finely chopped streaky bacon, pureed onion, minced garlic, and your selected spices. Use your hands to massage the mixture until well-blended. Cover with plastic wrap and marinate for at least 2 hours or overnight.
  2. Preheat your oven to 170°C (325°F). Shape the seasoned meat mixture into an 8-inch log and wrap tightly in overlapping sheets of aluminum foil. For support, thread skewers through the log.
  3. Bake the foil-wrapped kebab log in a foil-lined baking pan for 1 hour, then flip and roast for an additional 30 minutes. Check for doneness with a meat thermometer (internal temperature should reach 70°C / 160°F).
  4. Carefully unwrap the kebab log and increase oven temperature to 250°C (480°F). Roast for 10-15 minutes until the exterior is browned and crispy. Watch closely to avoid burning.
  5. Let the kebab rest for a few minutes before slicing thinly. Optionally, pan-fry the slices in a little oil before serving. Enjoy with warm flatbreads and fresh vegetables.
