- Preheat your oven to 400°F (200°C). Gather your ingredients and prepare your workspace.
- In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Sauté 1 finely diced onion and 2 minced garlic cloves for 4–5 minutes until the onions are translucent.
- In a large mixing bowl, combine 1 pound of ground chicken, 1 cup of seasoned bread crumbs, ½ cup of milk, ½ cup of grated Parmesan, 1 egg, ¼ cup of parsley, 1 tablespoon of Italian seasoning, and salt. Mix gently.
- Line an 8x4-inch loaf pan with aluminum foil and lightly grease it. Press half of the meat mixture into the bottom of the pan, layer with 1 cup of sliced mozzarella, and top with remaining meat mixture.
- Spread marinara sauce over the meatloaf and bake for 45 minutes until firm and juices run clear.
- Mix 1 cup of panko bread crumbs with 2 tablespoons of melted butter and 1 tablespoon of chopped parsley. Set aside.
- After 45 minutes, sprinkle the panko topping over the meatloaf, then return to the oven for another 15–20 minutes, until golden brown.
- Let the meatloaf rest for 10 minutes before slicing. Use the foil to lift it out and serve with your favorite sides.
