  • 1 teaspoon Fresh Thyme Or a smaller amount of dried thyme
  • 4 slices Mozzarella Cheese (sliced) Try fontina or provolone
For Cooking
  • 2 tablespoons Butter Substitute with olive oil for a healthier version
  • 1 tablespoon Olive Oil Any neutral oil can be used
  • to taste Salt and Pepper Essential for seasoning

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (390°F).
  2. Carefully slice pockets into each chicken breast without cutting all the way through. Season with salt and pepper.
  3. Melt butter in a skillet over medium-high heat. Sauté sliced mushrooms for about 3 minutes until golden brown.
  4. Add minced garlic and thyme, cooking for an additional 2 minutes. Toss in fresh spinach and stir until wilted.
  5. Stuff each chicken breast pocket with the mushroom-spinach mixture and layer mozzarella on top.
  6. Sear the chicken in olive oil for 1.5 minutes on each side until golden crust forms.
  7. Bake the chicken in the preheated oven for about 15 minutes, until internal temperature reaches 65°C (149°F).
  8. Let the chicken rest for about 5 minutes, then slice and serve.
