  • 1 tablespoon Fresh Rosemary
  • 1 tablespoon Fresh Thyme
  • 1 tablespoon Oregano Use dried herbs if fresh are unavailable.
  • 1 tablespoon Lemon Zest Lime zest can be a twist.

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk together the olive oil, fresh herbs, and lemon zest. Add salt and pepper.
  3. Coat each chicken thigh with the marinade. Place them skin-side up on the lined baking sheet.
  4. Slice the bell pepper, zucchini, and red onion, scattering around the chicken. Drizzle any remaining marinade over the vegetables.
  5. Bake for 35-40 minutes until chicken is golden and reaches 165°F (75°C) internal temperature.
  6. Let the sheet pan rest for five minutes before serving, alongside salad or couscous.
