Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Wash all your vegetables, slice the zucchini into thin rounds, and chop the bell peppers and red onion.
  3. Mince the fresh garlic and set aside.
  4. In a large mixing bowl, combine chicken breasts, zucchini, bell peppers, red onion, and minced garlic.
  5. Drizzle olive oil and sprinkle oregano, thyme, salt, and pepper over the mixture, then toss everything together.
  6. Spread the chicken and vegetable mixture onto the prepared baking sheet in a single layer.
  7. Bake for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
