Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Remove the giblets from the cavity of the whole chicken, rinse under cold water, and pat dry.
  3. Blend softened butter with finely chopped herbs, minced garlic, salt, and pepper until combined.
  4. Stuff the chicken cavity with chopped onion, carrot, celery, and lemon rind.
  5. Loosen the skin and spread half of the herb butter mixture underneath.
  6. Tie the legs of the chicken together with kitchen twine.
  7. Place chicken on a rack over a roasting pan with sliced onions, carrots, and celery.
  8. Roast uncovered in the oven, adding water to prevent burning, until internal temp reaches 160°F (71°C).
  9. Let the chicken rest for 20 minutes before carving.
