- Preheat your oven to 375°F (190°C).
- Remove the giblets from the cavity of the whole chicken, rinse under cold water, and pat dry.
- Blend softened butter with finely chopped herbs, minced garlic, salt, and pepper until combined.
- Stuff the chicken cavity with chopped onion, carrot, celery, and lemon rind.
- Loosen the skin and spread half of the herb butter mixture underneath.
- Tie the legs of the chicken together with kitchen twine.
- Place chicken on a rack over a roasting pan with sliced onions, carrots, and celery.
- Roast uncovered in the oven, adding water to prevent burning, until internal temp reaches 160°F (71°C).
- Let the chicken rest for 20 minutes before carving.
