Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Cut the chicken into 1-inch cubes and chop the bell peppers and onion into bite-sized pieces.
  3. In a large mixing bowl, combine the cubed chicken, chopped bell peppers, onions, and pineapple chunks. Toss gently.
  4. In a separate bowl, whisk together the soy sauce, brown sugar, reserved pineapple juice, cornstarch, garlic powder, and ground ginger. Optionally add red pepper flakes.
  5. Pour the sauce over the chicken and vegetable mixture, tossing to coat well.
  6. Spread the mixture evenly on a rimmed baking sheet in a single layer.
  7. Roast in the oven for 30-35 minutes until the chicken reaches 165°F (74°C) and veggies are tender.
  8. Garnish with freshly chopped cilantro or green onions before serving.
