Method
 

Fruit Salsa Preparation
  1. In a large mixing bowl, combine finely chopped mixed berries, diced watermelon, and minced jalapeños.
  2. Add diced red onion, apricot preserves, lime juice, and chopped coriander. Gently stir until combined.
  3. Set aside to let the flavors meld.
Tortilla Chips Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut the corn tortillas into triangles and arrange them on the prepared baking sheet.
  3. Brush or spray both sides with olive oil, then sprinkle with lime zest and coriander.
