Marinating and Cooking
- Combine BBQ sauce, Dijon mustard, honey, and vegetable oil in a mixing bowl. Marinate chicken in a resealable bag for at least 1 hour, preferably overnight.
- Preheat a skillet. Cook bacon strips for about 5 minutes until crispy but not fully cooked. Drain on paper towels.
- Preheat oven to 375°F or prepare grill to medium-high heat. Oil the grill grates.
- Slice marinated chicken thinly. Wrap with bacon, securing with toothpicks if necessary.
- Bake for 20-25 minutes or grill for 10-15 minutes until bacon is crispy and chicken reaches 165°F.
- Sprinkle cheddar cheese over chicken in the last few minutes of cooking to melt.
- Let the chicken rest for 5 minutes, then garnish with red onion, cilantro, and jalapeños.
