Method
 

Steps to Prepare
  1. Preheat the Oven to 400°F (200°C).
  2. Roast the Sweet Potatoes for 45-60 minutes until they feel soft.
  3. Prepare the Sweet Potato Filling by mashing the flesh with maple syrup, salt, and spices.
  4. Shred the Chicken and mix with BBQ sauce and diced red onion.
  5. Stuff the Sweet Potatoes with the sweet potato filling and top with BBQ chicken mixture.
  6. Bake again for 10-15 minutes until heated through and slightly golden.
  7. Garnish and serve with extra BBQ sauce if desired.
