Steps to Prepare
- Preheat the Oven to 400°F (200°C).
- Roast the Sweet Potatoes for 45-60 minutes until they feel soft.
- Prepare the Sweet Potato Filling by mashing the flesh with maple syrup, salt, and spices.
- Shred the Chicken and mix with BBQ sauce and diced red onion.
- Stuff the Sweet Potatoes with the sweet potato filling and top with BBQ chicken mixture.
- Bake again for 10-15 minutes until heated through and slightly golden.
- Garnish and serve with extra BBQ sauce if desired.
