Preparation
- Preheat oven to 425°F (220°C) and line a muffin tin with paper liners.
- Combine the streusel ingredients in a bowl and mix until crumbly.
- In a large bowl, whisk together the dry muffin ingredients.
- Add the wet ingredients to the dry mixture and mix gently.
- Fill muffin cups halfway, add streusel, then fill each cup ¾ full.
- Top with remaining streusel and bake for 5 minutes, then lower the temp to 350°F (175°C) and bake for another 15-17 minutes.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack.
- Optional: Drizzle with maple glaze before serving.
