For the Muffin Batter
  • 2 cups All-Purpose Flour Can be swapped with gluten-free flour.

  • 1 cup Brown Sugar Light brown works, but dark brown gives a richer taste.
  • 2 teaspoons Baking Powder Ensure it's fresh.
  • ½ teaspoon Baking Soda For added rise.
  • ½ teaspoon Salt Balances sweetness.
  • 1 teaspoon Cinnamon Adjust to taste.
  • ½ teaspoon Ginger Optional.
  • ¼ teaspoon Nutmeg Freshly grated works best.
  • 2 large Eggs Can substitute with a flax egg for vegan.
  • ½ cup Vegetable Oil Melted coconut oil can be used.
  • 1 cup Pumpkin Puree Fresh pumpkin can also be used.
For the Streusel
  • cup Flour
  • ¼ cup Brown Sugar
  • 1 teaspoon Cinnamon Adjust to taste.
  • 3 tablespoons Butter Can be swapped with a dairy-free spread.
Optional Maple Glaze
  • 1 cup Powdered Sugar Sweetener for glaze.
  • 2 tablespoons Milk Nut milk can be used.
  • 1 teaspoon Maple Flavoring Vanilla can be substituted.

Method
 

Preparation
  1. Preheat oven to 425°F (220°C) and line a muffin tin with paper liners.
  2. Combine the streusel ingredients in a bowl and mix until crumbly.
  3. In a large bowl, whisk together the dry muffin ingredients.
  4. Add the wet ingredients to the dry mixture and mix gently.
  5. Fill muffin cups halfway, add streusel, then fill each cup ¾ full.
  6. Top with remaining streusel and bake for 5 minutes, then lower the temp to 350°F (175°C) and bake for another 15-17 minutes.
  7. Cool in the pan for 10-15 minutes, then transfer to a wire rack.
  8. Optional: Drizzle with maple glaze before serving.
