Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking pan by greasing it lightly with oil or butter and lining it with parchment paper.
  2. In a large mixing bowl, whisk together the vegetable oil, granulated sugar, and vanilla extract until smooth and well combined.
  3. In a separate bowl, sift together the all-purpose flour, cocoa powder, baking soda, and kosher salt. Gradually add to the wet ingredients, stirring gently.
  4. Fold in the finely shredded zucchini and semi-sweet chocolate chunks until evenly distributed.
  5. Allow the batter to rest for 5 minutes.
  6. Pour the batter into the prepared pan and bake for 25-35 minutes, checking for doneness at 25 minutes by inserting a toothpick.
  7. Once baked, cool completely in the pan for about 30 minutes before slicing into squares.
