Step-by-Step Instructions for Sweet Potato Pie
  1. Preheat your oven to 425°F (220°C) and place a rimmed baking sheet on the lower rack.
  2. Combine gingersnap cookie crumbs with melted unsalted butter until it resembles wet sand. Press into a 9-inch pie dish.
  3. Beat together sweet potato puree, granulated sugar, brown sugar, and room temperature eggs on high speed for about 3 minutes.
  4. Mix in evaporated milk, salt, and pumpkin pie spice until smooth.
  5. Pour the sweet potato filling into the prepared crust, smoothing the top with a spatula.
