Ingredients
  

For the Mushroom Caps
  • 12 pieces Cremini Mushrooms or white button mushrooms for milder flavor
For the Tofu Filling
  • 14 ounces Extra-Firm Tofu or silken tofu may change the consistency
  • 2 cloves Garlic fresh or powdered based on availability
  • 2 tablespoons Lemon Juice freshly squeezed highly recommended
  • 1 teaspoon Salt
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Onion Powder
  • 1 teaspoon Black Pepper adjust to taste
For the Assembly
  • 1 tablespoon Balsamic Vinegar or apple cider vinegar for different twist
  • ½ cup Sun-Dried Tomatoes sliced into strips
  • 12 pieces Black Olives for the eye pupil substitute, green olives can be used

Method
 

Directions
  1. Step 1: Clean Mushrooms - Gently rinse or brush the cremini mushrooms to remove dirt. Carefully pop out the stems to hollow out each cap.
  2. Step 2: Prepare Filling - In a food processor, combine the extra-firm tofu, garlic, lemon juice, salt, Italian seasoning, onion powder, and black pepper. Blend until smooth and creamy.
  3. Step 3: Preheat Oven - Preheat your oven to 350ºF (175ºC). This temperature allows the flavors of the filling to meld beautifully.
  4. Step 4: Assemble Mushrooms - Drizzle balsamic vinegar inside each hollowed mushroom cap and fill with the tofu mixture using a piping bag.
  5. Step 5: Add 'Veins' - Place sliced sun-dried tomatoes atop the tofu filling to mimic veins and add a slice of black olive for the pupil.
  6. Step 6: Bake - Place stuffed mushrooms on a baking sheet and bake for 10-15 minutes until slightly wrinkled.
  7. Step 7: Serve - Remove from the oven, allow to cool slightly, and serve warm. Garnish with balsamic glaze or parsley if desired.
