- Preheat your air fryer or oven to 170°C (340°F). Peel and dice your pumpkin into 2cm cubes, toss with salt and vegetable stock, then spread on a baking tray. Roast for 15–20 minutes until tender.
- Once the pumpkin is cooked, remove the tray. Scatter gnocchi over the roasted pumpkin, crumble cheese on top, and drizzle with single cream.
- Increase the temperature to 220°C (430°F) and bake for 10–15 minutes until bubbling and cheese is melting.
- Remove from oven, sprinkle cheddar and pecans on top, and return for 3–5 minutes until golden and crunchy.
- In a skillet, toss sage leaves in oil until crispy. Top the bake with crispy sage before serving.
