  • 100 grams Cheddar Cheese Substitute mozzarella if desired.
  • 50 grams Pecans Can substitute walnuts or omit for nut-free.
  • 10 grams Sage Leaves Substitute with thyme if unavailable.
  • 250 ml Vegetable Stock Use water or chicken stock as an alternative.

Method
 

Step-by-Step Instructions
  1. Preheat your air fryer or oven to 170°C (340°F). Peel and dice your pumpkin into 2cm cubes, toss with salt and vegetable stock, then spread on a baking tray. Roast for 15–20 minutes until tender.
  2. Once the pumpkin is cooked, remove the tray. Scatter gnocchi over the roasted pumpkin, crumble cheese on top, and drizzle with single cream.
  3. Increase the temperature to 220°C (430°F) and bake for 10–15 minutes until bubbling and cheese is melting.
  4. Remove from oven, sprinkle cheddar and pecans on top, and return for 3–5 minutes until golden and crunchy.
  5. In a skillet, toss sage leaves in oil until crispy. Top the bake with crispy sage before serving.
