Preparation Steps
- Crush digestive biscuits into fine crumbs and melt unsalted butter. Mix and press into the bottom of a lined springform pan. Chill for 30 minutes.
- Beat cream cheese, icing sugar, and vanilla extract until smooth. Whip double cream to stiff peaks and fold into the cream cheese mixture.
- Pour the filling over the chilled crust, smoothing the top, and refrigerate for a minimum of 4 hours, preferably overnight.
- Remove cheesecake from the pan and arrange fresh fruits on top for decoration.
- Slice with a warm knife and serve chilled.
