Preparation Steps
  1. Crush digestive biscuits into fine crumbs and melt unsalted butter. Mix and press into the bottom of a lined springform pan. Chill for 30 minutes.
  2. Beat cream cheese, icing sugar, and vanilla extract until smooth. Whip double cream to stiff peaks and fold into the cream cheese mixture.
  3. Pour the filling over the chilled crust, smoothing the top, and refrigerate for a minimum of 4 hours, preferably overnight.
  4. Remove cheesecake from the pan and arrange fresh fruits on top for decoration.
  5. Slice with a warm knife and serve chilled.
