  • 4 sticks Mozzarella Sticks or cheddar/string cheese
  • 2 cups Leftover Mac and Cheese
  • 1 cup Grated Cheese mozzarella recommended
For Frying
  • 2 cups Neutral Oil vegetable, canola, or peanut oil
  • 1 cup Panko Breadcrumbs or regular breadcrumbs

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine all-purpose flour, salt, sugar, and instant yeast. Gradually whisk in warm water until smooth, then let it rise for 1-2 hours.
  2. Microwave leftover mac and cheese for 30 seconds and mix in additional grated cheese. This will be the filling.
  3. Scoop the mac and cheese mixture, flatten into a rectangle, place a mozzarella stick on top and enclose it, shaping it into a stick.
  4. Freeze the assembled sticks on a parchment-lined tray for at least 30 minutes.
  5. Heat your chosen oil to 340-350°F. Use a thermometer to check the temperature.
  6. Dip each frozen stick into the batter, coat with panko breadcrumbs, and fry for 3-4 minutes per side until golden brown.
  7. Remove corn dogs from the oil, drain on paper towels, and serve with dipping sauces.
