- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Combine sliced zucchini, yellow squash, diced tomatoes, and chopped onion in a mixing bowl. Drizzle with olive oil and season with salt, pepper, garlic powder, and dried oregano, then toss to coat.
- Transfer half of the vegetable mixture to the greased baking dish. Layer shredded chicken on top followed by crumbled bacon, then add the remaining vegetable mixture.
- Sprinkle sharp cheddar and parmesan cheese evenly over the layered bake.
