Instructions for French Onion Grilled Cheese
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 2 large thinly sliced onions, sprinkle with salt, pepper, and fresh thyme. Cook gently, stirring frequently, for 20-25 minutes until the onions transform into deep golden brown, caramelized beauties.
  2. Once your onions are beautifully caramelized, stir in 1 tablespoon of balsamic vinegar. Cook for an additional 1-2 minutes until the vinegar has reduced slightly.
  3. While the onions finish cooking, generously butter one side of each slice of sourdough bread.
  4. Take two slices of the prepared buttered bread and place them butter-side down. Begin layering with a generous amount of shredded Gruyère cheese, followed by the caramelized onions and then shredded mozzarella cheese.
  5. Carefully transfer the assembled sandwiches to the preheated skillet and grill for 3-4 minutes on each side until golden brown and crispy.
  6. Once grilled to perfection, remove the sandwiches from the skillet and allow them to rest for about a minute before slicing diagonally.
