- Preheat the oven to 350°F (175°C) and line an 8×8-inch square pan with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, rolled oats, brown sugar, and baking soda.
- Cut the cold unsalted butter into small cubes and blend into the dry mixture until crumbly.
- Press the remaining crumb mixture into the bottom of the prepared pan to create the crust.
- In a medium saucepan, combine the pitted dates, water, granulated sugar, and lemon juice. Cook until bubbling and thickened, about 8 minutes.
- Mash or blend the date mixture until smooth and spread it evenly over the pressed crust in the pan.
- Sprinkle reserved crumb mixture over the date filling and gently press down. Bake for 20-25 minutes, until golden brown.
