  • 1 tablespoon Lemon juice Can substitute with lime juice.
  • 1 teaspoon Ground cinnamon Nutmeg can also be used.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch square pan with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, rolled oats, brown sugar, and baking soda.
  3. Cut the cold unsalted butter into small cubes and blend into the dry mixture until crumbly.
  4. Press the remaining crumb mixture into the bottom of the prepared pan to create the crust.
  5. In a medium saucepan, combine the pitted dates, water, granulated sugar, and lemon juice. Cook until bubbling and thickened, about 8 minutes.
  6. Mash or blend the date mixture until smooth and spread it evenly over the pressed crust in the pan.
  7. Sprinkle reserved crumb mixture over the date filling and gently press down. Bake for 20-25 minutes, until golden brown.
  8. Cool for an hour, lift out using parchment paper, slice into squares, and enjoy.
