Ingredients

For the Pasta
  • 8 oz Pasta Any short variety like penne, fusilli, or rigatoni works perfectly.
For the Sauce
  • 1 cup Plain Greek Yogurt Using full-fat ensures richness, while low-fat may be thinner.
  • 2-3 cloves Fresh Garlic Always use freshly minced garlic!
For the Spiced Butter
  • 3 tablespoon Butter Can substitute with vegan butter for a non-dairy option.
  • 1 teaspoon Paprika Sweet or smoked, adjust to taste.
  • 1 teaspoon Red Pepper Flakes Incorporate for a hint of heat.
For Garnish
  • 1 tablespoon Fresh Parsley Optional, but recommended for a fresh finish.

Equipment

  • large pot
  • medium-sized bowl
  • small saucepan

Method

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Once boiling, add your chosen short pasta. Cook according to package instructions for about 10 minutes, or until al dente.
  2. While the pasta is cooking, take a medium-sized bowl and add the plain Greek yogurt. Mince the fresh garlic and mix them into the yogurt. Season with salt and pepper to taste, stirring until well combined.
  3. In a small saucepan, melt the butter over medium heat, swirling gently. Once melted, sprinkle in paprika and red pepper flakes, letting them sizzle for 1-2 minutes.
  4. When the pasta is done, carefully drain it. Return the hot pasta to the pot and immediately add the garlic yogurt sauce. Toss gently for 1-2 minutes until well-coated.
  5. Plate a generous portion of pasta and drizzle the warm spiced butter over the top. Optionally, chop fresh parsley and sprinkle it on.
