For the Salmon
  • 4 fillets Salmon Fillets Make sure to use skin-on fillets for added flavor.

Cooking Instructions
  1. Preheat a large skillet over medium-high heat with olive oil until shimmering.
  2. Season both sides of the salmon fillets with salt and pepper.
  3. Sear the salmon fillets skin-side down for 3-4 minutes. Flip and cook for another 1-2 minutes.
  4. Remove the salmon from the skillet and keep warm.
  5. In the same skillet, reduce heat to medium, add butter, and sauté minced garlic until fragrant.
  6. Add cherry tomatoes to the skillet and cook until they start to burst.
  7. Pour heavy cream into the skillet, season, and let simmer until slightly thickened.
  8. Stir in spinach and Parmesan cheese until melted and combined.
  9. Return the salmon to the skillet, spoon sauce over, and heat through.
  10. Serve warm, garnished with fresh basil.
