- Preheat a large skillet over medium-high heat with olive oil until shimmering.
- Season both sides of the salmon fillets with salt and pepper.
- Sear the salmon fillets skin-side down for 3-4 minutes. Flip and cook for another 1-2 minutes.
- Remove the salmon from the skillet and keep warm.
- In the same skillet, reduce heat to medium, add butter, and sauté minced garlic until fragrant.
- Add cherry tomatoes to the skillet and cook until they start to burst.
- Pour heavy cream into the skillet, season, and let simmer until slightly thickened.
- Stir in spinach and Parmesan cheese until melted and combined.
- Return the salmon to the skillet, spoon sauce over, and heat through.
- Serve warm, garnished with fresh basil.
