Step-by-Step Instructions
  1. Heat a tablespoon of olive oil in a large pot over medium heat. Crumble the Italian sausage into the pot and cook until browned, about 5–7 minutes. Drain excess grease, leaving a tablespoon in the pot.
  2. Stir in a teaspoon of Italian seasoning, a pinch of paprika, and a tablespoon of tomato paste to the sausage. Add minced garlic and red pepper flakes, cooking for an additional minute.
  3. Add diced sweet potatoes and pour in about four cups of water or broth. Bring to a boil, then cover and simmer for 15 minutes until sweet potatoes are tender.
  4. Stir in the tortellini and simmer according to package instructions (usually around 8–10 minutes) until al dente.
  5. Fold in fresh spinach until wilted, about 2 minutes, then stir in heavy cream and heat through for 1–2 minutes. Adjust seasoning before serving.
