- Heat a tablespoon of olive oil in a large pot over medium heat. Crumble the Italian sausage into the pot and cook until browned, about 5–7 minutes. Drain excess grease, leaving a tablespoon in the pot.
- Stir in a teaspoon of Italian seasoning, a pinch of paprika, and a tablespoon of tomato paste to the sausage. Add minced garlic and red pepper flakes, cooking for an additional minute.
- Add diced sweet potatoes and pour in about four cups of water or broth. Bring to a boil, then cover and simmer for 15 minutes until sweet potatoes are tender.
- Stir in the tortellini and simmer according to package instructions (usually around 8–10 minutes) until al dente.
- Fold in fresh spinach until wilted, about 2 minutes, then stir in heavy cream and heat through for 1–2 minutes. Adjust seasoning before serving.
