Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x9-inch baking dish with cooking spray or a light coating of olive oil.
  3. In a large skillet, add a drizzle of olive oil and sauté broccoli, cauliflower, and bell peppers for 4-5 minutes. Add spinach until wilted, then remove from heat.
  4. In a mixing bowl, combine softened cream cheese and sour cream until smooth. Then add heavy cream, garlic powder, and onion powder.
  5. Fold shredded cooked chicken into the creamy mixture and incorporate the sautéed vegetables.
  6. Pour the mixture into the greased baking dish and sprinkle with cheddar and mozzarella cheeses.
  7. Bake uncovered for 20-25 minutes until the cheese is melted and golden brown.
  8. Let the casserole rest for 3-5 minutes before serving.
