Cooking Steps
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and sauté for about 7 minutes until translucent.
- Add minced garlic and tomato paste to the onions. Cook for 1 minute, stirring frequently.
- Add the ground beef, breaking it apart. Cook for about 6 minutes until browned.
- Mix in the cooked rice, canned diced tomatoes, dried oregano, salt, and black pepper. Simmer for about 5 minutes.
- Cut the bell peppers in half, remove seeds, and place in a baking dish. Drizzle with olive oil.
- Spoon the beef and rice mixture into each half of the bell peppers.
- Cover the dish with foil and bake for 35 minutes. Remove foil and sprinkle cheese on top.
- Bake uncovered for an additional 10 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving. Garnish with fresh parsley.
