  • 1 medium Onion use yellow or sweet onion
  • 2 cloves Garlic fresh garlic is preferred
  • 2 tablespoons Tomato Paste can substitute with fresh diced or canned crushed tomatoes
  • 1 can Canned Diced Tomatoes include the juice
  • 1 teaspoon Dried Oregano can use basil or Italian seasoning
  • to taste Kosher Salt
  • to taste Black Pepper

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and sauté for about 7 minutes until translucent.
  3. Add minced garlic and tomato paste to the onions. Cook for 1 minute, stirring frequently.
  4. Add the ground beef, breaking it apart. Cook for about 6 minutes until browned.
  5. Mix in the cooked rice, canned diced tomatoes, dried oregano, salt, and black pepper. Simmer for about 5 minutes.
  6. Cut the bell peppers in half, remove seeds, and place in a baking dish. Drizzle with olive oil.
  7. Spoon the beef and rice mixture into each half of the bell peppers.
  8. Cover the dish with foil and bake for 35 minutes. Remove foil and sprinkle cheese on top.
  9. Bake uncovered for an additional 10 minutes until cheese is melted and bubbly.
  10. Let cool for a few minutes before serving. Garnish with fresh parsley.
