Ingredients
  

Marinade
  • 0.25 cup Olive Oil Substitute with avocado oil if preferred
  • 1 piece Lemon (juiced and zested) Fresh lemons are best
  • 2 cloves Minced Garlic Garlic powder can be used if fresh is unavailable
  • 1 teaspoon Dried Oregano Fresh oregano can also be used
  • 1 teaspoon Dried Basil Substitute with fresh basil if available
  • 1 teaspoon Dried Thyme Fresh thyme is a great alternative
  • to taste Salt
  • to taste Pepper

  • 14 ounces Halloumi Cheese Look for high-quality halloumi
  • to taste Vegetables (peppers, zucchini, onion) Substitute with any seasonal vegetables like cherry tomatoes or mushrooms

Method
 

Preparation
  1. In a mixing bowl, whisk together olive oil, lemon juice and zest, minced garlic, dried oregano, dried basil, and dried thyme. Season with salt and pepper to taste.
  2. Cut halloumi cheese into cubes and marinate in the mixture for 1 to 2 hours in the refrigerator.
  3. Soak wooden skewers in water for about 10 minutes to prevent burning.
  4. Chop your seasonal vegetables into 1½-inch pieces.
  5. Thread the marinated halloumi and veggies onto the soaked skewers, alternating between cheese and vegetables.
  6. Preheat the grill to medium heat, brush the grates with olive oil, and grill the kebabs for about 8-10 minutes, turning frequently.
  7. Garnish the kebabs with freshly chopped parsley or basil and serve warm.
