Step-by-Step Instructions for Msemmen
  1. In a large mixing bowl, combine all-purpose flour, fine semolina, sugar, salt, and yeast. Gradually incorporate warm water while mixing until a soft, pliable dough forms, about 5-7 minutes. Cover with a damp cloth and let it rest for about 30 minutes.
  2. Turn the dough out onto a lightly floured surface and knead by hand for about 10 minutes until smooth and elastic. Form into a ball, place back in the bowl, and let it rest for another 30 minutes covered.
  3. Once risen, divide the dough into golf-ball-sized portions. Lightly grease your hands and the surface with a mixture of vegetable oil and soft butter.
  4. Flatten one dough ball into a thin layer, brush with the oil-butter mixture, and sprinkle with fine semolina. Fold into thirds and then shape into a square.
