Method
 

Step-by-Step Instructions
  1. Grate zucchini and carrot, combine in a colander with salt, rest for 10 minutes.
  2. Heat olive oil in a pan, sauté diced onion and bacon until bacon is crisp and onion is golden.
  3. Drain zucchini and carrot using a towel to remove moisture.
  4. Mix together drained veggies, bacon, onion, capsicum, cheese, flour, salt, and pepper.
  5. Whisk eggs, milk, and remaining oil in another bowl; pour into veggie mixture and fold gently.
  6. Prepare baking dish, smooth mixture into it, and sprinkle extra cheese on top if desired.
  7. Preheat oven to 180°C (350°F) and bake for 35-40 minutes until golden and firm.
  8. Cool in pan for 10 minutes before slicing and serving.
