- Grate zucchini and carrot, combine in a colander with salt, rest for 10 minutes.
- Heat olive oil in a pan, sauté diced onion and bacon until bacon is crisp and onion is golden.

- Mix together drained veggies, bacon, onion, capsicum, cheese, flour, salt, and pepper.
- Whisk eggs, milk, and remaining oil in another bowl; pour into veggie mixture and fold gently.
- Prepare baking dish, smooth mixture into it, and sprinkle extra cheese on top if desired.
- Preheat oven to 180°C (350°F) and bake for 35-40 minutes until golden and firm.
