Method
 

Cooking Steps
  1. In a large skillet over medium heat, brown the ground beef for 5–7 minutes, stirring occasionally, until fully cooked and no longer pink.
  2. Transfer the browned beef into the slow cooker, then add matchstick carrots, chopped red bell pepper, and chopped scallions. Gently stir to mix all the ingredients.
  3. In a separate bowl, whisk together minced garlic, low sodium soy sauce, brown sugar, and chicken stock until well combined. Pour it evenly over the beef and vegetables.
  4. Set the slow cooker to low and let the mixture cook for 4–6 hours, or on high for 2–3 hours.
  5. About 30 minutes before serving, break the ramen noodles into quarters and gently add them to the slow cooker, pressing them down into the broth.
  6. Once the noodles are cooked and tender, ladle the beef and broth mixture into bowls. Garnish with additional chopped scallions and sesame seeds.
