Cooking Steps
- In a large skillet over medium heat, brown the ground beef for 5–7 minutes, stirring occasionally, until fully cooked and no longer pink.
- Transfer the browned beef into the slow cooker, then add matchstick carrots, chopped red bell pepper, and chopped scallions. Gently stir to mix all the ingredients.
- In a separate bowl, whisk together minced garlic, low sodium soy sauce, brown sugar, and chicken stock until well combined. Pour it evenly over the beef and vegetables.
- Set the slow cooker to low and let the mixture cook for 4–6 hours, or on high for 2–3 hours.
- About 30 minutes before serving, break the ramen noodles into quarters and gently add them to the slow cooker, pressing them down into the broth.
- Once the noodles are cooked and tender, ladle the beef and broth mixture into bowls. Garnish with additional chopped scallions and sesame seeds.
