  1. Start by preparing all your ingredients to ensure a seamless cooking experience. Slice the smoked sausage into bite-sized pieces, then halve or quarter the baby potatoes for even cooking. Dice the onion and bell pepper, and mince the garlic.
  2. Heat a large skillet over medium heat for about 2 minutes. Add the sliced smoked sausage and cook for 4-5 minutes, stirring occasionally, until browned.
  3. Stir in the parboiled baby potatoes along with the smoked paprika, Italian seasoning, salt, and black pepper. Cook for 5-7 minutes until the potatoes develop a crispy exterior.
