  • 1 medium Bell Pepper Any color works, can be omitted.
  • 2 cloves Garlic Mince finely; fresh is best.
  • 1 tablespoon Smoked Paprika Substitute with regular paprika if necessary.
  • 1 tablespoon Italian Seasoning Can use just oregano or basil.
  • to taste Salt & Black Pepper Essential for seasoning.
  • 2 cups Fresh Spinach Optional; can be replaced with kale or omitted.
  • 2 tablespoon Fresh Parsley For garnish; can substitute with cilantro or omit.

Step-by-Step Instructions
  1. Gather all ingredients. Slice smoked sausage, halve or quarter baby potatoes, dice onion and bell pepper, and mince garlic.
  2. Heat a large skillet over medium heat. Add sliced smoked sausage and cook for about 4-5 minutes until browned.
  3. Add prepped baby potatoes, smoked paprika, Italian seasoning, salt, and black pepper to the skillet. Cook for 5-7 minutes.
  4. Return the browned sausage to the skillet. If using fresh spinach, add it now. Stir for about 2 minutes.
  5. Let the mixture simmer together for an additional 2-3 minutes before removing from heat. Garnish with fresh parsley.
