- Gather all ingredients. Slice smoked sausage, halve or quarter baby potatoes, dice onion and bell pepper, and mince garlic.
- Heat a large skillet over medium heat. Add sliced smoked sausage and cook for about 4-5 minutes until browned.
- Add prepped baby potatoes, smoked paprika, Italian seasoning, salt, and black pepper to the skillet. Cook for 5-7 minutes.
- Return the browned sausage to the skillet. If using fresh spinach, add it now. Stir for about 2 minutes.
- Let the mixture simmer together for an additional 2-3 minutes before removing from heat. Garnish with fresh parsley.
