Ingredients
  

For the Salmon
  • 4 fillets Salmon Consider using king salmon or sockeye for a richer flavor.
  • 2 tablespoons Dijon Mustard
For the Vegetables
  • 1 pound Baby Potatoes Fingerling potatoes can work as a substitute.
  • 1 bunch Asparagus Trim the ends before cooking.
For Roasting
  • 3 tablespoons Olive Oil Avocado oil is a great alternative if needed.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For Seasoning
  • 1 tablespoon Seasoning Mix Customize with your preferred herbs.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Toss quartered baby potatoes with olive oil and half of your seasoning mix, then spread them evenly on one side of the prepared baking sheet.
  3. Roast the potatoes in the preheated oven for 8 minutes.
  4. Brush the salmon fillets with Dijon mustard and season with salt and pepper.
  5. Trim the asparagus ends and toss with remaining olive oil and seasoning mix.
  6. After 8 minutes, pull the baking sheet from the oven and push the potatoes to one side, making room for the salmon and asparagus.
  7. Return the sheet pan to the oven and bake for an additional 15-20 minutes.
  8. Once baked, cool for a minute and garnish with chopped parsley or dill before serving.
