Preparation Steps
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Toss quartered baby potatoes with olive oil and half of your seasoning mix, then spread them evenly on one side of the prepared baking sheet.
- Roast the potatoes in the preheated oven for 8 minutes.
- Brush the salmon fillets with Dijon mustard and season with salt and pepper.
- Trim the asparagus ends and toss with remaining olive oil and seasoning mix.
- After 8 minutes, pull the baking sheet from the oven and push the potatoes to one side, making room for the salmon and asparagus.
- Return the sheet pan to the oven and bake for an additional 15-20 minutes.
- Once baked, cool for a minute and garnish with chopped parsley or dill before serving.
