For the Salad
  • 2 units English cucumbers Sliced and seeds removed
  • 8 ounces Medium pasta (e.g., fusilli or bowtie) Cook al dente
  • 1 unit Sweet white onion Thinly sliced and soaked in cold water
For the Dressing
  • ½ cup Sour cream Can substitute with Greek yogurt
  • ¼ cup Mayonnaise Optional to reduce
  • 1 tablespoon Fresh dill Can substitute with dried dill
  • 1 tablespoon Sugar Optional, adjust to taste
  • 1 tablespoon Vinegar (white or apple cider)

Method
 

Steps
  1. In a small bowl, combine sour cream and mayonnaise. Add sugar, salt, fresh dill, and vinegar. Mix until smooth.
  2. Thinly slice the onion and soak in cold water for 10 minutes. Drain and pat dry.
  3. Cook pasta in boiling salted water for 8-10 minutes until al dente. Drain and rinse under cold water.
  4. Slice cucumbers in half lengthwise, scoop out seeds, and cut into thin half-moons.
  5. In a large bowl, combine pasta, onions, and cucumbers. Pour dressing over and toss gently to coat.
  6. Cover and refrigerate for at least 40 minutes before serving.
