For the Sauce
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Fresh Ginger minced, or use ground
  • 1 tablespoon Fresh Garlic minced, or use ground
  • 1 teaspoon Cornstarch or arrowroot powder as substitute
  • 1 teaspoon Red Pepper Flakes adjust to taste
For the Vegetables
  • 2 medium Zucchini sliced
  • 1 medium Onion sliced
For Cooking
  • 2 tablespoons Olive Oil for sautéing

Method
 

Step-by-Step Instructions
  1. Marinate the chicken with soy sauce, apple cider vinegar, and sugar for 10 minutes.
  2. Prepare the sauce by whisking together remaining soy sauce, vinegar, sugar, ginger, garlic, water, cornstarch, and red pepper flakes.
  3. Heat 1 tablespoon of olive oil in a skillet and cook marinated chicken until golden brown, about 3-4 minutes.
  4. In the same skillet, add another tablespoon of olive oil and sauté the onions for 4-5 minutes.
  5. Pour in the prepared sauce and let it simmer for 30 seconds until slightly thickened.
  6. Add the zucchini and cook for about 3 minutes until just tender before returning the chicken to the skillet.
  7. Serve hot, garnished with sesame seeds and green onions.
