  • 1 cup Granulated Sugar Add gradually
  • 1 tablespoon Lemon Juice Can substitute with white vinegar
  • 1 teaspoon Cream of Tartar

  • 1 cup Blueberries Fresh or cooked-down frozen
  • 1 ¼ Sugar Adjust to taste

Method
 

Step-by-Step Instructions
  1. In a small saucepan, combine blueberries and sugar over medium heat. Cook for about 10 minutes, stirring occasionally until thick. Strain and let cool.
  2. Preheat oven to 225°F (110°C) and line baking sheets with parchment paper.
  3. In a stand mixer bowl, beat egg whites, lemon juice, and cream of tartar until foamy. Gradually add sugar, whipping until shiny peaks form, about 5 minutes.
  4. Dollop meringue onto baking sheets, swirl in blueberry sauce using a toothpick.
  5. Bake for 80-90 minutes until dry to the touch. Leave meringues in the oven to cool for about 2 hours.
  6. Cool completely on baking sheets and then store in an airtight container.
