  • 1 medium zucchini can substitute with yellow squash
  • ½ cup brown sugar may swap with white sugar
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon adjust to taste
  • ¼ teaspoon salt
Crumb Topping
  • ½ cup brown sugar mix with white sugar for texture
  • ½ cup all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ cup melted butter can use vegan butter

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8- or 9-inch square baking pan.
  2. Finely shred the zucchini and squeeze out excess moisture using a kitchen towel.
  3. In a medium bowl, mix flour, baking powder, cinnamon, and salt.
  4. In a larger bowl, whisk together granulated sugar, vegetable oil, and egg until smooth, then stir in the milk.
  5. Gradually add the dry ingredients to the wet mixture, folding in the zucchini until evenly distributed.
  6. For the crumb topping, mix brown sugar, flour, cinnamon, and melted butter until crumbly.
  7. Pour the batter into the prepared pan and sprinkle the crumb topping evenly over the surface.
  8. Bake for 30-35 minutes until a toothpick inserted comes out clean, then let cool in the pan for 10 minutes before transferring to a wire rack.
