Method
 

Step-by-Step Instructions
  1. In a large skillet, heat a splash of oil over medium heat. Add 1 pound of ground beef and cook for 5-7 minutes, breaking it apart until browned and no longer pink. Drain excess fat.
  2. Transfer cooked ground beef into the slow cooker. Stir in 1 cup of matchstick carrots, 1 chopped red bell pepper, and 2 chopped scallions.
  3. In a mixing bowl, whisk together 4 minced garlic cloves, ½ cup of low-sodium soy sauce, 1 tablespoon of brown sugar, and 4 cups of chicken stock. Pour over beef and vegetables in the slow cooker.
  4. Cover slow cooker and set to low heat for 4-6 hours or high heat for 2-3 hours.
  5. About 30 minutes before serving, break ramen noodles into quarters and add to the slow cooker. Stir gently to combine.
  6. Once noodles are tender, ladle ramen into bowls and garnish with additional chopped scallions and sesame seeds.
