- In a large skillet, heat a splash of oil over medium heat. Add 1 pound of ground beef and cook for 5-7 minutes, breaking it apart until browned and no longer pink. Drain excess fat.
- Transfer cooked ground beef into the slow cooker. Stir in 1 cup of matchstick carrots, 1 chopped red bell pepper, and 2 chopped scallions.
- In a mixing bowl, whisk together 4 minced garlic cloves, ½ cup of low-sodium soy sauce, 1 tablespoon of brown sugar, and 4 cups of chicken stock. Pour over beef and vegetables in the slow cooker.
- Cover slow cooker and set to low heat for 4-6 hours or high heat for 2-3 hours.
- About 30 minutes before serving, break ramen noodles into quarters and add to the slow cooker. Stir gently to combine.
- Once noodles are tender, ladle ramen into bowls and garnish with additional chopped scallions and sesame seeds.
