  • 1 ripe avocado choose ripe for best texture

Step-by-Step Instructions
  1. In a large mixing bowl, combine cooked salmon, green onions, lemon juice, Dijon mustard, minced garlic, breadcrumbs, beaten egg, salt, pepper, and cayenne. Mix thoroughly until sticky, about 2-3 minutes.
  2. Scoop portions of the mixture and roll into bite-sized balls, about 1-2 inches. Place on a plate or parchment paper.
  3. In a skillet, heat oil over medium heat. Add salmon balls carefully, avoiding overcrowding.
  4. Pan-fry salmon balls for about 3-4 minutes on each side until golden brown.
  5. In a blender, combine avocado, lemon juice, salt, and any desired herbs. Blend until smooth.
  6. Remove cooked salmon balls from skillet and serve warm with creamy avocado sauce.
