For the Patties
  • 2-3 medium Sweet Potatoes Regular potatoes can be used as an alternative.
  • 1 cup Red Lentils Cooked.
  • 1 Onion Finely chopped.
  • 2 Garlic cloves Minced.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • Salt and Pepper To taste.
  • 1 cup Breadcrumbs Gluten-free breadcrumbs can be used for gluten-free version.
  • 3 tablespoons Olive Oil For frying.
For the Avocado Sauce
  • 1 Avocado Ripe.
  • 1 cup Fresh Cilantro Can substitute with parsley.
  • 1 Lime Juice Juice of one lime.
For the Glaze
  • ½ cup Mango Chutney Apricot preserves can be used as a substitute.
  • Additional Lime Juice For flavor.

Method
 

Step-by-Step Instructions
  1. Start by peeling and cubing sweet potatoes. Place in a pot of salted water, boil for 15-20 minutes until fork-tender, drain, and mash.
  2. In a mixing bowl, combine mashed sweet potatoes, cooked red lentils, onion, minced garlic, cumin, paprika, salt, and pepper. Fold in breadcrumbs.
  3. Shape the mixture into small patties, about 2-3 inches in diameter. Place on a lined baking sheet.
  4. In a skillet, heat olive oil over medium heat. Fry patties for 4-5 minutes on each side until golden brown. Transfer to paper towels.
  5. In a blender, combine avocado, cilantro, lime juice, and salt. Blend until smooth, adding water if needed.
  6. Mix mango chutney with extra lime juice in a bowl.
  7. Serve warm patties drizzled with avocado sauce and mango chutney, garnished with cilantro.

Notes
