Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with aluminum foil and brushed with olive oil.
  2. Carefully slice each chicken breast in half horizontally and pound them gently to ensure uniformity. Pat the chicken dry using paper towels.
  3. Generously season both sides of the chicken breasts with salt and pepper.
  4. In two shallow bowls, whisk one egg until frothy, and in another, combine panko breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper.
  5. Dip each chicken piece into the egg, then transfer it to the breadcrumb mixture, pressing firmly for an even coating.
  6. Place the breaded chicken onto the baking sheet and bake for about 15 minutes, until fully cooked and golden brown.
  7. Flip each chicken piece, spoon marinara sauce over the top, and sprinkle with mozzarella cheese. Broil for 2-4 minutes until the cheese is bubbly and golden.
