Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Microwave the cabbage for about 5 minutes or steam until leaves soften.
  3. Coat the bottom of a baking dish with tomato soup.
  4. Warm the lentil bolognese filling in a skillet over medium heat for about 5 minutes.
  5. Scoop ¼ to ⅓ cup of filling into a cabbage leaf, fold, and roll tightly.
  6. Place rolled cabbage leaves seam-side down in the baking dish, layering with more tomato soup if stacking.
  7. Cover tightly and place over high heat for about 5 minutes.
  8. Bake for 35-40 minutes if using a Dutch oven, or 40-50 minutes for a casserole dish.
  9. Serve hot over brown rice, garnished with fresh herbs and optional vegan sour cream.
