Preparation
- Preheat the oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
- In a medium bowl, beat together cream cheese, granulated sugar, one egg, and vanilla extract until smooth.
- In a large bowl, sift together flour, baking powder, baking soda, and salt.
- In another bowl, whisk together granulated sugar, brown sugar, vegetable oil, remaining eggs, vanilla extract, and buttermilk until glossy.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Carefully fold in blueberries.
- Pour half of the batter into the prepared pan, dollop with cream cheese mixture, and top with remaining batter.
- Bake for 55-65 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
