Ingredients

  • 2 cups all-purpose flour spooned and leveled
  • 2 teaspoons baking powder
  • 1 te teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup granulated sugar can substitute with brown sugar
  • ¼ cup brown sugar optional but recommended
  • ½ cup vegetable oil can use melted butter
  • 3 large eggs or flax eggs for vegan option
  • 1 teaspoon vanilla extract use pure extract for best results
  • ½ cup buttermilk can substitute with milk mixed with lemon juice
  • 1 cup blueberries fresh or frozen, do not thaw
  • 8 oz cream cheese softened
For Serving
  • 1 tablespoon butter for spreading

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. In a medium bowl, beat together cream cheese, granulated sugar, one egg, and vanilla extract until smooth.
  3. In a large bowl, sift together flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk together granulated sugar, brown sugar, vegetable oil, remaining eggs, vanilla extract, and buttermilk until glossy.
  5. Gently fold the wet ingredients into the dry ingredients until just combined.
  6. Carefully fold in blueberries.
  7. Pour half of the batter into the prepared pan, dollop with cream cheese mixture, and top with remaining batter.
  8. Bake for 55-65 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
